Raise your hand if you like early mornings… I do not. My hand is firmly down by my side. But I do like breakfast. No, I take that back. I fervently love breakfast.
I also like to eat (mostly) clean food. I have a super finicky stomach, and I’ve found that less processed food sits better. I also like to eat a good amount of protein in the morning, because I’ve found that it keeps me full longer and helps me have enough energy for the day.
Enter: eggs. A fantastic form of protein. This recipe for Sausage and Egg Bites is great because morning haters like me can make it the night before.
It’s also paleo and Whole30 friendly, for those of you who care about those things.
I originally found this recipe via Today’s Letters, from when she posted about her Whole30 journey. Bless her. I did about… a Whole14. Then Jon and I were going home for Memorial day and decided to end it a bit early. 30 days without popcorn is a long time! I did a three month long paleo challenge with my sister Alli, though. And while it was difficult, it did help me reset my cravings.
So, if you’re trying to eat clean, or if you’re just trying to eat something tasty in the morning, you should try the Sausage and Egg bites!
